Pumpkin Mousse

Hello this is Nessa :)

So for thanksgiving this year i made a pumpkin mousse dessert. I found the recipe online but I can't remember the website :P
  This is all you will need ...
         3 ounces shaved dark chocolate
         1 teaspoon powdered gelatin
         2 tablespoon dark rum
         1/4th teaspoon salt
         1/4th teaspoon ground nutmeg
         1/2 teaspoon ground ginger
         1 1/2 teaspoon ground cinnamon
         2 teaspoons vanilla extract
         15 ounce canned pumpkin
         3 1/2 cup heavy cream
         1 cup suger
         5 large egg yolks

First fill a large bowl halfway with ice water and set aside. Next whisk the egg yolks then add to a sauce pan with 3/4 & 2 tablespoon sugar and 3/4 cup heavy cream. Stir it while it heats on medium-low heat, stir till it thickens, this took about 10 mins. I next but it in another bowl and set on the ice water.

In another bowl mix together pumpkin, vanilla, the spices, salt then add to the egg mix (once the egg mix is cooled)
In a separate small bowl stir 1 tablespoon of rum with 1 teaspoon gelatin together. then quickly add a heated 1 tablespoon of rum to the mix until its dissolved then immediately whisk.
Beat 1/2 cup heavy cream to stiff peaks then fold it into the pumpkin mix. place the mix into a shallow dish and place into the fridge over night

The next day beat the remaining heavy cream and the sugar to stiff peaks. layer the heavy cream with the pumpkin and on top sprinkle the chocolate shavings :)
For the chocolate shavings i took a bar of chocolate (ghirardelli milk chocolate) and just shaved that

and ..tada :)

Eggs For Breakfast Sandwiches

It's Ethel here to share a recipe that I found on pinterest!

I am not a morning person. I do get up early, however the thought of cooking at 5am for myself, let alone the family, is the last thing I want to do.
I thought I would try the eggs in a muffin tin this morning.

 Seems simple enough.
Preheat oven to 350 degrees
Spray muffin tin with non-stick spray
 I added 2-3 fresh spinach leaves to each  muffin cup.
( I am going to experiment with different things next go around.)
Crack the egg into the muffin cup.
Season to taste. I seasoned the eggs with sea salt, pepper & garlic powder.
 Bake for 15-20 mins til its cooked to your liking.
I cooked mine for 20 mins, I wanted soft, non-runny yolks.
Cooking time depends on your oven.
 

After they are cooked.




Breakfast Sandwich

As you can see we all had one this morning. Hubby said, this is great! Daughter was too busy eating to talk, which means it was a hit with her also!
I put the extra eggs in an air tight container in the fridge. Now we have breakfast for a few days. Everyone can pop their English muffin in the toaster and the egg in the microwave, when they are up and ready to eat.


Viola! There is breakfast!





You can see the eggs are a bit smaller then the muffins. I am going to try them in a muffin top tin since it is thinner and wider then the normal muffin tins.

Kale Chips

~WARNING~

These are very addicting!!!

To make these wonderful yummy treats.. this is all you need:

1 Bunch kale (about 6 oz)
1 Tbsp Olive Oil
Sprinkle of Sea Salt (to taste)

Preheat oven to 300 degrees F. Was and dry kale, remove center ribs and cut into 2 inch pieces (kale shrinks when you bake it so you may want to cut your pieces larger). Toss kale pieces in a bow with olive oil. Lay on baking sheet and sprinkle with sea salt. Bake for about 20 minuets, or until crisp.




Spinach Burgers

I made these the other day and they came out pretty good!!

Here is what you need to make these yummy burgers...

1 bag of thawed and well drained chopped spinach
2 egg whites
1 whole egg
1/4 c diced onion
1/2 c shredded cheese
1/2 c bread crumbs
1 tsp red pepper flakes
1 tsp salt
1/2 tsp garlic powder
Mix well in a bowl like this:
I sprayed my frying pan with non-stick spray.. Fried them till they had a golden crust
To serve I made a nice side salad with mixed greens and light ranch dressing.. Added some sliced almonds and dried cranberries.. Also add a slice of french bread with some butter... I found that slightly sauteing some red onions with some garlic made a wonderful addition to these burgers.. Also try adding some sour cream to the side.. 
**The only thing I would change about this recipe is....
1/2 tsp Red Flakes 
1 tsp Garlic Powder

Ethel and I decided to start this blog as a way to try and post information about the foods we come across.. Ethel (Amy) and I have been best friends for over 5 years and needless to say we have come across many cool things.. And 1 of those things is FOOD!!

I (Lucy) recently decided to go vegetarian... Yes I know sounds crazy.. BUT in the 3 weeks that I have been its not so bad.. And trust me, Im not missing meat.. Now, Im not a full vegetarian I will still eat chicken and fish just not red meat... 

So what will you find on this blog? Good thing you asked! I am a BIG fan of Pinterest SOO I am constantly finding new recipes to try.. And I love going to my local area farmers markets... Also my big obsession is cook books not sure why but Im always buying new ones.. So here you will find pictures of the foods we have made and tried..Recipes and tid bits.. What we found at the farmers market and so on... We will also give you our opinions on what we made and if it needs to be changed in any way..

So I hope you will join Ethel and I in our many wonderful adventures in the kitchen!!
